Tom White puts together honest, old school reds that will put a smile on your dial. This is pure fruit, with a background of spicy oak and chewy tannin. The warm Barossa climate provides plenty of lush redcurrant jam, ripe plum and dark chocolate here, with an almost port-like consistency to it. Hedonistic and powerful, and too easy to drink.

Curator Wine Co is a labour of love by young viticulturalist and winemaker Tom White. Inspired by his father, who tended vineyards in cooler parts of Australia, he set up shop in the Marananga subregion of the Barossa Valley in 2012 and hasn't looked back. The property he runs with his wife Bridget is a sizeable 30 acres in size, with 22 acres of vineyard. The vines spread across the estate are planted on a complex mix of soils, producing fruit that has differing profiles every year. Tom is passionate about curating individual wines from each block, to show the differences in soil profiles, rootstock, and vine age. His end goal is to make wines that reflect their site through minimal handling and intervention, with complexity aided by time in barrel to soften the wines and bring an extra layer of detail. He's fanatical about the detail in the wine, and it really shows!

This beautifully rich and refined Shiraz from the Curato Wine Co definitely goes above and beyond when it comes to flavour, aroma, providing more than a hint of luxury on the palate! Its chocolatey depth and dark berry flavours give it plenty of versatility for food pairing - you can get equally great results from a medium-rare ribeye as you will from a deliciously savoury beef stew or braise, or a lamb shank or roast lamb leg in gravy, or a wild mushroom or strong blue cheese-based dish. It’s also great when paired with dark chocolate, too!
