Yes, this is Sauvignon Blanc, but not as you know it. This white has been barrel fermented and aged and displays intense notes of shortcrust pastry, vanilla and sweet spice. On the palate, we have piercing acidity with an attractive green quality that is unequivocally Sauvignon Blanc in character. This is a must-try for oaky white wine lovers.

Wild Air is a new, innovative project recently launched by a winemaking legend in South Africa: Hannes Storm, of Storm wines. Wild Air focuses on seeking out small plots of old vines in South Africa's Cape, and dedicating them to small parcel projects. The Sauvignon Blanc from Wild Air comes from a 20-year-old vineyard that is largely planted with the red Pinot Noir grape variety. The idea here is to showcase a different side to the South African Sauvignon Blanc narrative. This iteration has been barrel fermented for added texture, complexity and restraint. Storm largely focuses his core production on Pinot Noir and Chardonnay. The sub-region of Hemel-En-Aarde literally translates to 'Heaven and Earth', and is an apt description for the region's suitability to these Burgundian grape types. So when he came across this Sauvignon Blanc fruit, there was a natural opportunity to push to boat out and try something different - and boy are we glad that he did!

We make no reservations about our undying love for a good Sauvignon Blanc, and this bottle from Wild Air hits all the right spots when it comes to the freshness, flavour and food-pairing potential we adore about this variety. It’s a great wine for pairing with all your favourite white fish and shellfish dishes - sea bass, bream, cod, hake, prawns, mussels, scallops and beyond - and it’s a superb salad-pairing wine, too. Green vegetables, especially asparagus, peas and green beans, creamy cheeses and pasta dishes, chicken and turkey with citrus or lots of herbs… the list just goes on and on!
