Details
Bright, elegant and genuinely delicious, this cava opens with green and yellow apple, pear skin, lemon and grapefruit, lifted by white blossom, jasmine and a whisper of honeysuckle - all with a lovely mineral, chalky quality underneath. On the palate it's dry and vivacious, with high acidity and a beautifully creamy texture that carries notes of apple pie, toasted brioche and a gentle hint of vanilla. Cava this good makes you wonder why you'd ever reach for anything else!

The story of Vins el Cep starts in the 1980s, however, the estate on which the relatively young wine brand was founded on can trace its roots back as far as 1499! Vins el Cep is the result of a collaboration of four Catalan families who decided that the whole was greater than the sum of its parts. So they took on the historical Can Llopart de les Alzines wine estate, and their trajectory since then has been impressive to say the least. The team naturally cultivate the mainstay grape varieties you would expect to find in the Cava region, with Macabeo, Xarel-lo and Parellada each grown in their own specific vineyard sites before being hand-picked and taken to production. The winery at Vins el Cep is gravity-fed, reducing energy usage and strengthening the team's green credentials as a sustainable producer. It is also worth noting that all of the vineyards at Vins el Cep are also organic certified. Another interesting point to note is that these guys are only one of 25 from around 300 Cava estates who work with 100% estate owned fruit.

Pairing guide
The creamy texture and bright acidity make this Cava brilliant with food. It's a natural with grilled seafood - oysters, langoustines, a classic fruits de mer platter - or a crispy tempura with a citrus dipping sauce. The toasty, apple pie notes love a soft, creamy brie with honey. For a vegan pairing, try it alongside a light leek and potato tart with a crisp pastry base, or a chilled white gazpacho with almonds - the wine's minerality and blossom notes play off the creamy, nutty flavours beautifully.

Cava, Spain
Cava is a sparkling wine that originates from Catalonia, Spain. Cava is made using the traditional method, which involves a second fermentation in the bottle to create its distinctive fizz. The wine is typically made from a blend of indigenous Spanish grape varieties, such as Macabeu, Parellada, and Xarel-lo, and can also include Chardonnay or Pinot Noir. Cava can range in style from dry and crisp to sweeter, dessert-style wines, and is often enjoyed as an aperitif or served alongside seafood and other light dishes. With its refreshing bubbles and affordable price point, Cava has become a popular alternative to more expensive sparkling wines like Champagne.
