Carménère is quite famous for having green, leafy aromas that have put many people off in the past. In recent years however, it has been refreshing to see Chilean wine producers dialling it back a bit and this wine is a perfect example. Check out that sumptuous, opulent fruit set with oodles of freshness on the palate and a beautiful, chalky mineral finish. This is modern Carménère at its best.
Founder, head winemaker and winemaking legend, Marco Puyo founded Viña Dagaz in 2015 alongside Patricio Gomez-Barris. Largely a consultant winemaker in Chile, Marco's reputation and legend in the domestic wine scene is legendary. Given his clear and obvious knowledge of the diverse range of vineyards, climates and terroir on offer in Chile, it surprised Marco in 2005 to find Pumanque, a unique terroir. These granite-based soils allow the team to produce some of Chile's most exciting and impressive wines. The soil is comparable to those found in parts of Côtes du Rhône in France and Rioja in Spain. Dagaz is an ancient Celtic rune that means 'the beginning of a new path', and is a suitable name for this project that reflects the new direction that both Marco and Patricio are taking. This project is brand new to the UK, so at Good Pair Day's HQ, when we saw Dagaz come up, there was only one thing left to do. The Estate range comprises of two reds, a straight Cabernet Sauvignon and Carménère, whilst their top wine, Tierras de Pumanque is a world-class blend of Cabernet Sauvignon, Carménère, Syrah and Petit Verdot.

Who could possibly resist the depth and impact of this stunning Carménère wine from Viña Dagaz? Here’s a clue - it’s definitely not us. This wine is sure to impress at mealtimes, and will pair most successfully with smoked and roast meats ranging from chicken to pork, lamb, beef, and duck… and pretty much anything else you can throw at it. This wine is well-suited to mole dishes, carnitas, and South American-style barbecue, and will also work very nicely with green pepper dishes, traditional stews like goulash, and with belly pork rubbed with paprika and other spices.
