Details
Half and half Chardonnay/Pinot Noir. This is made from fruit harvested in Burgundy but vinified and made in Champagne. It's elective and bright, with plenty of orange fruit vibes and oodles of personality. Enjoy!
Patrick Piuze is the rockstar of Chablis, shaking up the world of Chardonnay with a charisma as vibrant as his wines. Originally from Canada, Patrick traded snow for vines and hasn’t looked back since. Now a force to be reckoned with in Burgundy, he’s a man on a mission: to let the true voice of terroir sing through his bottles. Patrick is all about precision and purity. He doesn’t own vineyards, but don’t let that fool you—he has a sixth sense for sourcing grapes from the crème de la crème of Chablis’ chalky soils. Whether it’s a zingy Petit Chablis or a Grand Cru masterpiece, Patrick coaxes out the essence of the land, bottling wines that feel like a crisp, mineral-rich hug. Catch him in his cellar, and you’ll find a guy who’s as down-to-earth as the soils he champions. With Patrick, it’s not just wine; it’s an adventure in authenticity, energy, and a little bit of maverick magic. Cheers to Chablis with a Piuze twist!

Pairing guide
High-quality sparkling like this is actually a very versatile wine to pair with as well, particularly the more intense examples like this fizz from Patrick Piuze. It's still hard to go past the classics here, like tuna steaks, salmon or pink fish, with a light sauce or even something a little richer. Tofu with a little soy tang would be a delight here, and the creaminess would also ensure it will pair perfectly with steamed veggies or salad with a full-flavoured dressing. It's also worth trying this sparkling at ice cold and just 'cold' temperatures to watch it change - a fun exercise!

Wine region

Burgundy, France
Burgundy is located east between Paris and the Swiss border and is known for producing some of the finest and most sought-after wines (Chardonnay and Pinot Noir) in the world. The region can be divided into the following sub-regions from north to south: Chablis, Côte d'Or, Côte Chalonnaise, and Mâconnais, with parts Beaujolais to the south now under consideration.
Chablis is located north of the Côte d'Or and is known for its crisp, dry white wines made from Chardonnay, made without the influence of oak. Some of the best domaines in Chablis include William Fèvre and Christian Moreau.
The Côte d'Or is the heart of the Burgundy wine region and is divided into two main areas: the Côte de Nuits and the Côte de Beaune. The Côte de Nuits is known for its red wines, while the Côte de Beaune is known for its white wines. The best domaines in the Côte d'Or include Domaine de la Romanée-Conti and Domaine Georges Roumier!
Mâconnais and often overlooked Côte Chalonnaise produces red and white wines. Some of the best domaines in these regions include Domaine Bouchard Père et Fils and Domaine Jean-Jacques Girard.
