Details
This is a pretty serious wine. The nose is fresh and displays notes of apples, orange and lemon. On top of that there is a lovely herbal quality. In the mouth it is mineral, with a lemony freshness and a lick of fennel. Lots of character and complexity here, a triumphant fizz made in the old school, ancestral method.

You will find the region of Štajerska in good company in northern Slovenia, it's on the border of Austria and Hungary and in some cases, there are actually vineyards that cross borders into one or both of the countries. This part of the world is high altitude and very cool - great for high quality wine grapes! Matija Žerjav (nicknamed Matic) tends to nine hectares of old, organic family vineyards and makes wine in an old cellar that dates back to 1852! He is the third generation of his family to make wine, and he aims to emulate his grandfather in a 'hands off' approach to winemaking. Matic's philosophy is to only work with what mother nature gives him. He doesn't use chemicals in his winemaking, and the result is very pure, honest expressions of the region he represents. Organic of course, and everything is done by hand - painstaking, but with quality as the only goal. He is one of the coolest, most exciting winemakers in Slovenia.

Pairing guide
Deliciously fizzy and with a thrilling dryness, this Pét-Nat from Matic is about as food-friendly as it’s possible for a sparkling wine to be. It’s a fantastic bottle to pair with fiery Korean fried chicken, and with a classic dish of Wiener schnitzel with fries and pickled cabbage. Pork belly dishes, barbecued chicken legs, and spicy sausages will also work well, as will southeast Asian curries, homemade sushi, and a hearty plate of fish ‘n’ chips.
