Details
Naturally fermented in stainless steel and spending four months on its lees (yeast deposits) to add some texture, this Sauvignon blanc shows lots of ripe fruit, with a slightly oxidative, bruised apple character, adding richness. The wine finishes with notes of stone fruit and white pepper. Lots of energy and breadth on display here, this is good.

Pairing guide
We all love a crisp bottle of Sauvignon Blanc here at Good Pair Days, and we’ve got to say - this release from Les Pierres d’Aurele couldn’t be more impressive if it tried. When it comes to food pairing, it’s going to be wonderful with heartier white flaky fish recipes; we’re talking cod with white beans, halibut with buttered spinach, or monkfish with creamy rice, to name but a few. Simple chicken breast dishes with parsley and garlic, seared scallops and other shellfish, and delicate green salads and asparagus dishes will also be fantastic here.
