Champagne Solemme isn’t your average bubbly operation. It’s the passion project of Olivier Langlais, a man who walked away from the commercial grind to get his hands dirty - literally. Nestled in the Montagne de Reims, Olivier’s 6 hectares of Premier Cru vines are organically farmed, biodynamically managed, and treated more like living, breathing collaborators than crops. He brews his own compost (because importing it from outside Champagne would just be rude), uses no pesticides, and tends his vines like a proud parent. The result? Grapes so clean and full of life you could eat them straight off the vine - and people do. His vineyard escaped the rot that plagued the region in 2017, which tells you everything about the health of his land. In the cellar, Olivier keeps things just as pure and honest. No chaptalization, no filtration, no SO2, and definitely no masking what the vineyard has to say. He even disgorges according to the lunar calendar - because why not let the moon have a say too? Solemme champagnes are single-vintage, low- or no-dosage, and absolutely brimming with character. They're not built to taste the same year after year - they're snapshots of a time and place, with all the quirks and charm that come with that. These are Champagnes for people who like their bubbles with a bit of backbone, and their winemakers with a bit of soul.
