Aligoté is the sometimes-forgotten white variety in Burgundy, and it's a welcome, hopefully, lovely new discovery. This wine is crisp and lively, with fresh Meyer lemon, green apple, and lifted floral tones that make it both elegant and contemplative.

The French wine scene can be somewhat of a minefield at times, all we really want is a supplier that makes wines from all across the country while still displaying regional and sub-regional typicity.. Simple right?!? Well, enter Maison Johanès Boubée, which is a winery that has succeeded in the French landscape, while relatively unknown outside its borders. The winery has access to all the goodies around the country, and, aside from an impressive winemaking team, it also employs sommeliers to taste each wine and confirm it captures the all-important terroir feel of each region. The winery is a nod to the old-school way, where you didn’t need to boast a fancy label to sell a bottle of wine, and the juice inside is the most important part. We have tasted a wide range of their wines and are very impressed with the overall quality of each bottle. The La Cave D'Augustin Florent range focuses on single regions; whether it be Cahors, Burgundy, Jurançon or Minervois, there will be something for everyone.

This is a crisp, elegant and quietly contemplative white that rewards light, delicate food. Grilled white fish with a lemon and caper butter, some fresh oysters on ice or a delicate prawn and fennel salad are all excellent starting points that let the wine's Meyer lemon and green apple freshness shine. That lovely floral lift also makes it a natural with a soft goat's cheese and herb tart or a light zucchini and ricotta pasta. For something more relaxed, a good soft cheese with some sliced green apple and a few good crackers is really all you need alongside this elegant and very welcome Burgundian discovery.
