This sake drinks like a super light white wine - soft, smooth, and seriously easygoing. It’s low in booze and acidity, but still brings loads of character with gentle floral vibes, a hint of gingerbread, and that classic Ginjo silkiness. Made from 60% polished Sakamai rice, it’s elegant, delicate, and just the right amount of fancy without trying too hard!

If sake had royalty, Konishi Shuzo would be wearing the crown. Brewing since 1550 (yep, that’s not a typo), this family-run legend is the oldest single-family-owned sake brewery in Japan - and they’ve still got their hands on the reins. Based in Itami, Hyogo - one of Japan’s most legendary sake regions - they were the first to produce clear sake (thanks to a happy accident involving some ash… long story), and they’ve been innovating ever since. These folks have centuries of tradition under their belt, but they’re not stuck in the past - they’re brewing all year round and constantly pushing the envelope with new styles. The setup is pretty dreamy, too. Clean, soft water from the Rokko and Nagao mountains, a killer climate for brewing, and strong ties with rice growers who know what’s up. Konishi doesn’t just rest on its historic laurels - they brew year-round in a slick, state-of-the-art facility, so the creativity never stops flowing.
