Details
This Sparkling Brut from Indómita is a delightful, spritzy affair with lemon sherbet, white peach, and citrus blossom notes that tantalise you before you have even had a sip. With a zesty start along with a soft bead of bubbles, this will be one to add to the list.
Viña Indómita is located in the heart of Chile wine country, with their winery located in the wine region of Casablanca as well as owning vineyards in the Central Valley region of Maipo. Casablanca is located in between Valparaiso and Santiago with stunning views of the Pacific Ocean, where you will find plenty of Sauvignon Blanc, Chardonnay and Pinot Noir planted in this maritime dream. The Central Valley, by comparison, is a garden of Eden, with fertile soils perfect for producing a wide range of fruit and vegetables to feed the nation as well as supplying plenty of land ideal for vineyards. Viña Indómita have several labels and GPD are keen to introduce you to their Huella range where they focus on local varieties like Carménère as well as all the usual suspects from Sauvignon Blanc to Merlot. The winery is relatively new to the game, however that hasn’t stopped them focusing on tourism and wine tastings in the region.

Pairing guide
Crisp and refreshing, Viña Indómita Sparkling Brut delivers bright citrus, green apple, and a lively fizz that makes it a versatile, celebratory choice. It’s perfect with fresh seafood—think oysters, prawns, or ceviche. Its acidity also balances creamy dishes like smoked salmon with cream cheese, quiche Lorraine, or a soft brie. For casual bites, pair it with fried chicken, fish and chips, or even salted popcorn. Light, zesty, and playful, it’s a sparkling that elevates everything from aperitif snacks to full feasts.
