Well, we did say that these guys are exciting and dynamic, and this wine encompasses just that! This stunning old vine Rubin boasts notes of red cherry and blackcurrant alongside notes of sweet spice and clove. There's also a cooling menthol freshness to it. This is a voluptuous wine, with long, drawn-out tannins, a silky mouthfeel and plenty of dense, black and red berry fruit. Outstanding.

Petar Georgiev and Radostin Milkov have gone on to form one of the most innovative, exciting and dynamic wine partnerships in Bulgaria and are widely considered by many a commentator to be producing amongst the finest wines that the country has to offer. The pair have almost single-handedly championed both the Mavrud and Rubin grape varieties (the latter being a crossing between Syrah and Nebbiolo). Their search for the finest iterations of both of these grapes took them far and wide across the whole of Bulgaria until they found two plots, both boasting roughly 40-year-old vines of each grape type, the stage was set. Not only are Georgiev & Milkov doing a stellar job in pushing the perceptions and boundaries of quality for both of these varieties, but they are having some fun with them as well; crafting a Pét-Nat from Mavrud, as well as a Provençal-style pink from Rubin. Most recently these guys debuted with their first white wine made from Red Misket, an often misunderstood variety, which they aptly named 'Why not Red Misket?'.

You can’t beat a good bottle of Rubin, and this bottle from Georgiev & Milkov is - make no mistake - one of the best around. Delicate yet deeply flavourful, it’s a beautifully versatile food-pairing wine, and has the potential to match with a vast array of dishes and ingredients. We especially enjoyed it with braised beef or lamb casseroles, but it will be every bit as good with juicy cuts of duck, grilled chicken thighs with Mediterranean vegetables, and dishes which put root vegetables front and centre. A roasted side of salmon, lentil curries, wild mushrooms or vegetarian lasagna would also be brilliant here.
