50/50 Chardonnay and Pinot Noir. Yet another shining (or sparkling) example of just how good English fizz really is. The Mosaic is intense, loaded with bruised apple, citrus notes and a peachy ripeness up top. 18 months lees ageing in the bottle has given this wine a truly sumptuous breadth on the palate, it's rich, rounded, full bodied and opulent from top to bottom. Who needs Champagne anyway!

English wine needs little introduction these days. Our wine industry is going from strength to strength with a plethora of awesome, boutique producers making world class still and sparkling wines that can rival the best sparkling wines of the world. Fox & Fox is the perfect embodiment of the English sparkling wine scene. They are a multi-award winning small grower-producer cultivating 30 acres of the classic Champagne varieties. Their vineyards sit either side of the historic village of Mayfield, amongst the rolling hills of leafy Sussex. Vines were planted in 2004 and they have been producing stunning fizz since 2009. The climate here in the UK is simlar to Champagne, it is cool, allowing for high levels of acidity to be retained in the fruit- this is essential for quality sparkling wine. Everything in the vineyard is done by hand, with the team taking huge steps to minimise use of chemicals. The result? Wines that can rub shoulders with the best the Champagne has to offer.

This stunning English sparkling wine packs in no shortage of class and distinction, offering a truly wonderful taste sensation that’s perfect for pairing with a wide array of dishes and ingredients. It’s a superb wine to pair with smoked salmon dishes - including omelettes featuring the aromatic cured fish, a notoriously tricky pairing - and it’s also wonderful with croquetas of ham and cheese, calamari, fritto misto, and other battered seafood and fish favourites. You can’t go wrong with a delicate salad of pears, nuts, and other sweet and savoury flavours, and it’s also great with Indian and Thai appetisers, quiches, and pastries.
