There really is something about organic Prosecco... often it takes on a beautiful, characterful accent with lots of green, grassy, capsicum notes and this stunner from Fidora hits the nail on the head. Expect notes of basil and chalk in the tart, racy semi-sparkler from one of the region's finest organic wine producers.

Since 1974, Fidora has been the first organically certified wine producer in Italy's Veneto, the home of the famous red wines of Valpolicella, crisp, pure Pinot Grigio's and of course, Prosecco. The forward-thinking movement toward organics was the brainchild of Guido Fidora, who made the conversion at a time when organic wine was neither fashionable nor a prerequisite for many consumers. Nowadays, the Civranetta estate is one of the oldest examples of a fully organic winery not just in Veneto, but the whole of Italy. Taking the notion of organics to the next level, Fidora has also invested heavily in the biodynamic program, which encourages the development of a multitude of plants and animals across all of their vineyards and throughout the estate. As a result of their efforts, hares, foxes, pheasants, ducks, herons, boars and many other species have been allowed to thrive under the sustainable efforts of the pioneering Fidora team.

Everyone loves a chilled glass of Prosecco with their lunch or dinner, and this beautiful bottle from Fidora is right up there with our favourites. This is an excellent wine to bring out with savoury and salty canapes, fish and seafood dishes, strong cheeses and all kinds of charcuterie. It’s also ideal with Thai and Vietnamese flavours - especially crab cakes, spring rolls, banh mi and all types of aromatic dumplings - and will work well with sushi and sashimi, too. Salty-and-sweet combos such as dates wrapped in bacon will work nicely, and you’ll also get great results with fruity desserts, white chocolate and meringue!
