This delicious Garnacha based fizz is a soft blush in the glass with a stream of fine bubbles. The nose is all wild strawberries, red apple and a hint of white blossom. It's fresh, lively and gently creamy with a clean, dry finish. Easy drinking and super moreish!

Valencia is one of Spain's most exciting wine regions, a sun-drenched stretch of Mediterranean coastline and inland hills where the vines have been growing since Roman times. The team behind El Ninot de Paper has spent years getting to know these vineyards inside out, combining traditional growing methods with modern winemaking to produce wines that are unapologetically Spanish and seriously good fun. The name is a nod to Las Fallas de Valencia, one of Spain's most spectacular festivals. Every March, the city erupts in a riot of fire, colour and noise as enormous papier-mâché sculptures (the ninots) are paraded through the streets before being ceremonially set alight. It's chaotic, joyful and utterly unforgettable. Basically, the perfect inspiration for a wine label.

This is a tapas wine through and through. Pop it open with a spread of Spanish nibbles: jamón, manchego, patatas bravas and some padron peppers, and you're basically halfway to Valencia. For a vegan spread, think marinated olives, padron peppers and a good bowl of gazpacho. It's also just brilliant on its own as an aperitif, the sort of bottle that makes everything feel like a celebration.
