The team behind El Ninot de Paper has spent years getting to know these vineyards inside out, combining traditional growing methods with modern winemaking to produce wines that are unapologetically Spanish and seriously good fun. The name is a nod to Las Fallas de Valencia, one of Spain's most spectacular festivals. Every March, the city erupts in a riot of fire, colour and noise as enormous papier-mâché sculptures (the ninots) are paraded through the streets before being ceremonially set alight.
