Yup, a Savagnin from Burgundy! This is lively and wild, with intense notes of ripe (and slightly bruised) orchard fruits. This is rich and opulent on the palate, with tension and beautiful purity and concentration of fruit. Unique and expressive, this is a seriously good wine.

Certified organic since 2014 and also now practising biodynamic viticulture, Jean-Yves at Domaine Devevey is making some of the purest whites from Burgundy that we have tried for some time. There is a real natural, unpushed character to all of these wines that we immediately fell in love with here at Good Pair Days Central. Low sulphur is also commonplace at Devevey, with extended lees (yeast) contact with all of their wines, as well as significant barrel ageing. The Domaine plays host to around 7.5 hectares of vines in Burgundy, stretching from Rully to Beaune. Jean-Yves' mantra is one of natural biodiversity and he encourages his vineyards to have as much flora and fauna as possible, with a long-term approach to pest management. Savagnin is a white grape originally from the Jura region of France, and is just starting to find its way into vineyards in other regions as well! Beautifully balanced and with a stunning array of flavours to explore, this bottle is going to pair very well with grilled pork chops and fennel slaw, nuttier cheeses like comté, and especially with barbecued fish including trout, salmon and catfish fillets. We also enjoyed it with roast duck with caramelised onions, and it’s a stunning match for traditional alpine treats like raclette and fondue.

Burgundy is located east between Paris and the Swiss border and is known for producing some of the finest and most sought-after wines (Chardonnay and Pinot Noir) in the world. The region can be divided into the following sub-regions from north to south: Chablis, Côte d'Or, Côte Chalonnaise, and Mâconnais, with parts Beaujolais to the south now under consideration. Chablis is located north of the Côte d'Or and is known for its crisp, dry white wines made from Chardonnay, made without the influence of oak. Some of the best domaines in Chablis include William Fèvre and Christian Moreau. The Côte d'Or is the heart of the Burgundy wine region and is divided into two main areas: the Côte de Nuits and the Côte de Beaune. The Côte de Nuits is known for its red wines, while the Côte de Beaune is known for its white wines. The best domaines in the Côte d'Or include Domaine de la Romanée-Conti and Domaine Georges Roumier! Mâconnais and often overlooked Côte Chalonnaise produces red and white wines.
