Details
This is a super clean gently sparkling Prosecco from the Bedin family that displays notes of orchard pear skin, red apples and a lovely attractive herbal accent. This is mineral and chalky and both of these qualities offer excellent structure, poise and balance to this wine. The Spago is as clean as a whistle and perfect for kicking back and relaxing into your evening.

Società Agricola Colli Asolani was formed in 1990 by Giovanni Bedin who owned a vine nursery in Veneto, Italy. However, for a better understanding of this producer's history, we need to go back to his grandfather, Giacomo who purchased land in 1948 and planted his vines. Over the decades the family business has been passed from father to son and now lies in the capable hands of Enrico Bedin. Together with his brothers, Luigi, Damiano and Denis, the four have turned Colli Asolani into a modern outfit that is producing some of the best Prosecco around. The estate now owns around 40 hectares of vineyards that cover both DOC and DOCG (Italy's highest mark of quality) sub-regions. Of particular note is the Asolo DOCG, which in 2014 was conveniently named Colli Asolani (from Asolo), a name that the Bedin's winery and their brand now share with this prestigious Prosecco-producing region. Across their range, the Bedins are producing wonderfully clean and fresh examples of declassified 'frizzante' style wines, through to precise Proseccos that range in their style and sweetness. We are delighted to be working with them here at Good Pair Days.

Pairing guide
Who doesn’t love a great glass of Prosecco? This perennially-popular wine style is about as food-friendly as it’s possible to be, and will pair very well indeed with any fried, battered or breaded meat, fish, or vegetable dish, spicy crispy noodle creations, rice dishes, seafood and shellfish classics, and salt-and-sweet combination of charcuterie and dried fruits. Smoked salmon, chicken salads and fish tacos are also highly recommended!

Veneto, Italy
The Veneto wine region is located in the north-east of Italy and is known for producing some of the most distinct wines in Italy. The region has a Mediterranean climate, with hot, dry summers and cool, wet winters. The broader region is home to three DOCG and twenty three DOC wine regions and produces iconic wines like Prosecco, Soave and Amarone. The region is the third largest in Italy and accounts for the bulk of Prosecco production in the world.
