Les Fondamentaux is deeply layered and beautifully precise. Expect citrus peel, white flowers and crunchy apple up front, followed by custard cream, baked orchard fruit, soft spice and a whisper of toast from the barrels. It's bone-dry, super fresh, complex, textural, and insanely good value for what’s in the bottle!
Champagne Vincent Bliard is the real deal, (the kind of family you whisper about with major respect in somm circles). Based in Hautvillers, they’re one of only three families in the entire region who have farmed organically since the mid-1960s. That’s not a trend, that’s a conviction. “Papy Jean” (92 and still in the vines every single day - absolute icon) was among the original pioneers who believed Champagne should be grown with nature, not against it. With coopers in their bloodline, oak has always been part of the family language, so barrel ageing isn’t a stylistic choice here, it’s heritage. Today, the torch is carried by Florence and Antoine, who took over in 2018 and are steering the domaine into a modern era without losing an ounce of soul. Four hectares, sixteen individual plots, all worked organically and vinified parcel by parcel. Everything is hands-off, spontaneous, slow, and thoughtful. Les Fondamentaux is exactly what it sounds like: the core expression of who the Bliards are - earth, breath, wood, time. A Champagne that feels grounded, alive, and quietly confident.
