This delicious Champers opens with crisp yellow apple, lemon and a blush of peach skin - then it gets properly indulgent. The Gremillet story begins with a gift - in 1979, Jean-Michel Gremillet inherited a small plot of vines from his mother, Lulu, and decided to make something of it. Fast forward to today and that tiny inheritance has grown into 55 hectares of vineyards on the steep, sun-drenched hillsides of the Côte des Bar in the Aube, around 45km from Troyes - a corner of Champagne that doesn't get nearly enough credit. Pinot Noir is king at Gremillet, making up around 80% of the vineyard. The family ages their NV cuvées for two years - well beyond the legal minimum - and vintage wines for at least five, because good things take time. Sustainability is a serious priority: HVE3 certified since 2020, with an organic cuvée, and solar panels installed in 2024 to power the winery. They've even turned grape growing into a community affair, supplying fruit to over 80 other Champagne makers across the region.
