We’re always delighted to uncover a new zesty, satisfying and oh-so-delicious Pinot Bianco wine; it’s one of those varieties that’s a little underrepresented on the international scene, but which always delivers the goods when it comes to flavour and character. This one from Borgo dei Filari is destined to be served with lighter salads, antipasti, simple pasta and tapas dishes; we’re talking prosciutto melone, caprese salad, cacio e pepe, grilled chicken pasta salad and anchovy or tuna bruschetta. Oven-baked fish such as snapper, bream and bass will be wonderful here, as will dishes featuring oysters, clams, sea urchin and other shellfish.
