Details
This is old-vine Cencibel (Tempranillo!) with serious depth and polish. The nose is layered and seductive, with ripe black and red fruits, dried cherries, liquorice, cocoa, black pepper, clove, and balsamic. On the palate it’s full-bodied, smooth, and beautifully balanced, with rounded, elegant tannins and a freshness that keeps everything lively. Long, persistent, and deeply satisfying, this is a wine that feels both classic and confidently modern.

Bodega García de Lara is all about going back to the roots, literally. The family winery in Villarrubia de Santiago (Toledo) dates back to 1878, and while winemaking came and went over the generations, the vineyards never did. They were patiently farmed by parents and grandparents, waiting for the moment when the next generation would bring them back to life. In 2017, that moment arrived, with a clear mission: to rediscover the flavour of their land and the wines their ancestors once made. The philosophy here is refreshingly honest - respect the grape, the soil, and the vineyard’s history, but don’t shy away from modern know-how. The result is small-scale, thoughtful winemaking that lets place speak loudest. La Cueva Colorá is their crown jewel: a single old-vine Cencibel (Tempranillo) vineyard planted in 1960, dry-farmed at nearly 770 metres on limestone and silty soils. Named after the red-hued cave that sits in the plot, this vineyard is pure Castilla-La Mancha character - rugged, expressive, and quietly powerful.

Pairing guide
This wine is built for the table. Think slow-cooked lamb shoulder with rosemary and garlic, oxtail or beef cheek stew, or grilled pork with smoked paprika and herbs. It’s also fantastic with earthy dishes like wild mushroom ragu, lentils with chorizo-style spices, or roasted aubergine with miso, cocoa, and thyme for a bold vegan pairing. Anything rich, savoury, or gently spiced will light this wine up and let those red fruit and cocoa notes really shine.
