Restarting the Cava engine for you here team! This wine is a delight to drink. It's a lean, mean, citrus machine. Underripe lemons and limes line up next to a lovely green, stemmy, almost celery nuance with the faintest dusting of jasmine and pastry in the background. Tart, lean with a slightly saline finish on the palate. This fizz walks a tightrope of tension and austerity making it quite a serious drink in our eyes.

The Cava industry in Spain is one that’s dominated by tradition, its secrets held closely by a small handful of long-running ancestral Cava houses, each as ferocious as the next when it comes to guarding the nature of their blends and techniques. Bocchoris Cava is one such winery; established over a hundred years ago, the winery has remained in the Santacana family to this day and produces sparkling wines which at once speak of time-honoured tradition, while also looking to a bright future for the region’s signature fizz. The Santacana family have exclusive access to some of the finest vineyards in their region, where the Xarello, Macabeo, and Parellada grapes are grown to express the optimal brightness and acidity required for their house style. Poor quality soils ensure yields are as low as possible - an essential feature of any fine winery, and vital to the distinction that Bocchoris Cava insists upon. While modern winemaking methods are employed within the winery, traditions reign supreme in the vineyards; grapes remain picked by hand, and chemical intervention is kept to an absolute minimum. Deliciously dry and with a delightfully biting acidity, this Brut Cava from Bocchoris couldn’t be more food-friendly if it tried. We absolutely loved sipping this elegant sparkler alongside simple and classic tapas dishes; Spanish tortilla, croquetas, marinated artichokes, and buttered green vegetables. However, it’s going to be delicious with deep fried and battered meat, fish, and vegetables, and is a top pairing for creamy sauces, soft cheeses, and salads, too.
