This is a lively, toasty and citrus-driven sparkling wine that is a natural at the start of any occasion and a brilliant companion throughout. Smoked salmon blinis, a classic prawn cocktail or some delicate crab and avocado tartines are all wonderful starting points that let the wine's toasty, citrus character shine. It's equally lovely alongside a soft goat's cheese and herb tart, some lightly crumbed calamari with a citrus aioli or a fresh zucchini and ricotta frittata for something a little more substantial.
