Who likes their white wines on the rich, heavy, creamy side of the spectrum? We do! This grape naturally has reddish skin, helping to get even more colour into the glass. This wine is packed full of aromas of vanilla, and an attractive sweet-spiced salted caramel accent on the nose (the wine is not sweet). A textural delight.
Simply put, 'Aoton' means 'the finest specimen in the class', and there you have it, case closed. But not quite... Aoton's neighbourhood winery can be found hidden amongst the houses in Peania, Mesogia, which is in the larger Attica region of Greece. Here, the team cultivate local grape varieties, Savatiano, Roditis and Mandilaria, delivering wines of outstanding concentration and quality. Sotiris Gkinis oversees winemaking at Aoton, and has been central to the rejuvenation of the winery's 10-hectare estate where he introduced the idea of night harvesting, which is not uncommon in the wine world. When temperatures drop through the night, wine producers have the opportunity to harvest their crop under somewhat easier conditions versus the daytime. The cooler temps also mean that the rate of oxidation of grapes slows down, keeping the fruit fresher for longer after it has been picked. Aoton now have a formidable reputation not only in Greece but on the wider European wine stage, with many of their wines rightfully attracting attention from some of the world's greatest wine geeks - including us!
