Nestled in the heart of Penedès, Spain - think rolling vineyards and sun-kissed days - Emendis is all about crafting cava with character. They’ve been at it for generations, perfecting the art of bubbly bliss. This is a bit greener on the nose than the brut, with notes of celery and grass. We love the effortless balance between those green characters and the patisserie accent. Good complexity with a slightly nutty finish.

2.Bodegas Pinoso 'Diapiro' Merseguera 24

Bodegas Pinsos is based in sunny Alicante, where they have a strong focus on organic management in the vineyard. Pinoso's vineyards are planted at an average of 600m above sea level. This elevation makes for cooler nights allowing their fruit to retain that all-important acidity needed for a balanced wine. Bodegas Pinoso has a small estate planted with Merseguera, a rare variety only found in this part of the world. The wine has a lovely freshness to it, with floral undertones, grapefruit drive and a touch of stone fruit. The palate opens out with fleshy apricot and a nice touch of grip.

3. Susurro Rosado 2024

A juicy and flavourful Spanish rosé! This bright and juicy rosé is giving strawberries, raspberries, and stewed peach vibes. Floral blossom and a touch of pink peppercorn add lift. It's dry, fresh, and a little playful with cherry drop notes and a salty snap on the finish. It's ticking all the boxes too - Organic? Tick! Vegan? Tick!
