Story

Wylde Sky Brewing is a bold, independent brewery born in 2018 in the village of Linton, just outside Cambridge. Founded by a group of mates with a shared love of beer, music, and good times, Wylde Sky was built on the idea that brewing should be experimental, exciting, and a little bit rock ’n’ roll. The founders, Paul, the ever-curious brewer, and his crew of flavour-hunting rebels set out to create a space where creativity could thrive, both in the brewhouse and at the bar.

At the heart of it all is the Wylde Sky Taproom, a vibrant, welcoming hangout attached to the brewery itself. With live music, food trucks, and a buzzing community feel, it’s the kind of place where you’re just as likely to find a local ale aficionado as you are a curious newcomer sipping their first sour.

The beers? Extraordinarily diverse. From juicy IPAs and crisp lagers to bold stouts and seasonal experiments, Wylde Sky isn’t afraid to push boundaries. They brew with flair and a healthy dose of fun, never taking themselves too seriously, but always taking their beer seriously.

For our second instalment this year with Wylde Sky we have gone for a special release, brewed in collaboration with the Permit Rooms in Cambridge (part of the Dishoom family.) Needless to say this fully loaded Guava bomb is going to be the perfect accompaniment with spicy cuisine, but also a stand alone crusher too. If you're after flavour, character, and a bit of chaos in a can, this one's for you!

PAIRING GUIDE

The best of two worlds collides in this kolsch-inspired pale ale, bringing German-style crispness to this hoppy beer that definitely hits all the right notes. It’s a real winner when it comes to food pairing - we loved this one with spicy crab cakes, battered cod or pollock and a classic tikka masala, but it’s going to be just as delicious with warm goat’s cheese salad, pilaf and other rice dishes, and crispy noodles, too.
