Story
In the rolling hills of Mold, North Wales, Polly’s Brew Co sprang to life in January 2018 as a modest two-man band, founder and brewer Sean Wheldon and sales-lead Arron Fellows. The curious name “Polly’s” actually honours a stable-yard horse belonging to the previous farm occupants, Polly the horse trotted in long before the hops.
From those humble beginnings, brewing only once every eleven days on a rickety kit in a converted stable, Polly’s rapidly grew. The brewers quickly ramped up capacity to brewing up to ten times a week in a purpose-built facility twelve times larger than their original home.
Polly’s is resolutely hop-forward, freshness-obsessed and modern. Their core range features pale ales, IPAs, lagers and even gluten-free avatars, and their “Augment” series tackles more experimental zones. Their team now comprises about 15 people, and the brewery is rated as the highest in Wales and among the UK’s elite.
In 2025 Polly’s opened its first dedicated taproom and restaurant, Polly’s Social, located in Mold’s Daniel Owen Shopping Centre, giving fans a chance to drink the freshest pours right at source.
With roots in a horse stable and wings in the craft-beer stratosphere, Polly’s Brew Co embodies how bold vision, hop zeal and freshness obsession can pour into something remarkable.
We've gone for something a little lighter this month from Polly's on our next outing. 'Pilsner' is a simple grist bill, which lends a gentle biscuit sweetness, perfectly balanced by noble hops Mittelfrüh and Saaz in tribute to the legendary Czech and German brewing masters. The result is a crisp, clean pilsner that’s incredibly refreshing, beautifully balanced, and delightfully moreish, an ode to classic European craftsmanship with a modern, easy-drinking twist.

PAIRING GUIDE
A good pilsner is a tough one to beat when it comes to delicious beers to pair with food, and this crisp and refreshing release is right up there with the best of them. Clearly taking inspiration from Czech alehouse creations, we loved this bright lager with cheesy dishes featuring camembert or melted cheddar, savoury pastries with classic combos like chicken and leek, and all kinds of stews with white meats and vegetables. Wiener schnitzel and chips, simple pasta dishes and salty fish like sardines or anchovies will also work very well indeed.
