Story
Moonwake has been making waves in the UK's craft beer scene since its inception in 2021. The name 'Moonwake, meaning 'the moon's reflection on a body of water', pays homage to its picturesque waterside location in Leith and underscores the brewery's commitment to crafting beers that mirror the depth and quality of their experiences.
Founded by a team with extensive backgrounds in craft beer and brewing, Moonwake prides itself on producing precision-brewed beers that cater to a wide range of palates. Their core range includes a refreshing Lager, a hop-forward Pale Ale, a robust IPA, and a smooth Milk Stout. Each brew showcases their dedication to balance and quality, ensuring there's a pint for everyone to enjoy.
Moonwake's taproom, an award-winning space on Tower Street, offers a unique experience where visitors can enjoy a pint while overlooking the gleaming brew kit. The mezzanine level provides a panoramic view of the brewing process, complemented by vibrant geometric murals that add a splash of colour to the industrial setting. It also plays host to quizzes, community events all year round. Whether you're a beer geek or a casual sipper, Moonwake is a stellar stop on any Edinburgh adventure.
Come for the views, stay for the brews!
But let’s talk about that Kölsch which you'll find nestled in this month's box. This cheeky hybrid lager-ale might just be Moonwake’s secret weapon, bright, bready, and smoother than a jazz saxophone solo at golden hour. It’s German heritage with a Scottish soul, and dangerously sessionable.

PAIRING GUIDE
Kolsch beers are well and truly having their moment in the spotlight lately, and we couldn’t be happier about it. The team at Moonwake brewery’s homage to this west German beer style is an absolute beauty, and it’s a perfect choice for pairing with light lunches, barbecues and picnics. Anything with a big heap of salted chips will work very well indeed, and it’s also surprisingly excellent with Japanese-inflected recipes - mackerel with miso, tonkatsu curry, homemade sushi and yakitori chicken, especially. It’s fabulous with pork sausages, delicious with sauerkraut burgers and great with kimchi fries and fried rice dishes, too.
