Story
Moderato started the way all good ideas do: two people crossing paths at exactly the right moment. Fabien, the brand brain with a taste for doing things differently, and Sébastien, born into wine and raised on terroir, looked at the way we drink and thought… surely there’s another way. Not less pleasure, not less flavour - just a smarter balance. Moderato is their answer: wines made for people who love wine deeply, but don’t always want the alcohol attached.
What sets Moderato apart is how seriously they take the craft. This isn’t grape juice in disguise - it’s real wine first, made from carefully chosen grape varieties and proper winemaking, then gently dealcoholised with precision and respect. They use low-temperature vacuum distillation to lift the alcohol while keeping the soul of the wine intact. Every decision is about harmony - acidity, roundness, structure - so the final wine still feels satisfying, and alive. It’s moderation without compromise, pleasure without pressure, and proof that “non-alc” can still taste seriously good.
This non-alc red is soft and fruity. The nose leans into round, friendly aromas of red and black cherry, plum, a hint of cocoa, and a little red liquorice sweetness that keeps things playful. On the palate it’s dry with bright acidity, very light in body, and just a whisper of tannin for structure.

PAIRING GUIDE
Food-wise, keep things gentle and comfort-driven. This works best with lighter dishes like roasted veg, mushroom-based plates, tomato pasta, or lentil stews where acidity does the heavy lifting. It’s also a solid match for casual grazing - flatbreads, mild cheeses, or plant-based dishes with a touch of sweetness or spice.
