København Kombucha is what happens when Champagne energy meets Copenhagen cool. Founded in 2019 by Louise Benkjær Limbach after years soaking up French and Austrian food culture, this is kombucha made with a proper sense of occasion - bottled like bubbles, poured like a celebration. It’s all about letting everyone join the cheers, whether you’re skipping alcohol or just fancy something sharper, brighter, and a bit interesting in your glass. And their very first release picked up a major product award, which is always a good sign you’re onto something special!

In the glass, think elegant, lightly sparkling, and beautifully balanced - more vinous than vinegary, with that gentle sweet-sour tension sommeliers love to geek out over. Through seriously dialled-in fermentation, København Kombucha makes a 0.0% kombucha that’s shelf-stable, planet-friendlier, and still full of character. It’s mindful, festive, and proof that great drinks don’t need alcohol to feel grown-up. So chill it, pop it, and watch people ask, “Wait… what is this?”

Hidcote Blue pours a soft, golden glow like ripe apples caught in the golden hour sun. The first sniff serves Nordic lavender swagger, backed up by ginger warmth, juicy peach and squashed yellow apples, with that gentle fermented-tea hum underneath. On the palate it’s dry, lively and quietly complex: oxidised apple and ginger take the lead, a soft acidity keeps things fresh, and there’s a subtle little bite at the end that makes you want another sip. It's elegant, confident, and perfect for dry Jan celebrations.
