Story
Four Pillars Gin, founded in 2013 in the Yarra Valley, Australia, has rapidly gained acclaim in the craft gin market. Renowned for its quality and distinctive flavours, Four Pillars emphasises a blend of traditional and native Australian botanicals. The company's flagship product, Rare Dry Gin, features juniper berries, citrus, and spices, enhanced by native ingredients like lemon myrtle and Tasmanian pepperberry leaf. This combination creates a balanced and aromatic profile, setting it apart from conventional gins.
Four Pillars is dedicated to sustainability and innovation. They repurpose waste from gin production into products like marmalade and gin-steamed Christmas puddings. Their sustainability efforts extend to their use of solar power and water recycling at their distillery.
The brand has won numerous awards, including being named International Gin Producer of the Year at the International Wine & Spirit Competition in 2019 and 2020. Four Pillars' success is attributed to its commitment to quality, sustainability, and the distinctive Australian twist in its botanicals, which have helped establish it as a leading name in the global gin industry.
Four Pillars' 'Olive Leaf' gin is the perfect number for a salty, saline, dirty martini. Distilled with olive oil, you can almost feel the slightly creamier texture across the palate. With notes and flavours of olive brine, Nocellara olives and all sorts of savoury characters, this is a serious gin, with plenty of umami appeal.

PAIRING GUIDE
Made from a fascinating blend of cold-pressed olive oil and olive leaf, this delicious and rather unique gin is ideal for a range of savoury cocktails and other treats. It’s also excellent for pairing with salty starters and light bites - olive and walnut tapenade is an obvious choice but a fabulous one to try, and it’s also great with halloumi bites, Cantabrian anchovies with capers and pickles, and Scandinavian-style open sandwiches and cured fish fillets. Smoked salmon, oysters and funkier seafood like cockles and whelks would also match up brilliantly.
