Story
In the late 1920s, Juan Torres Casals (of the famous Torres wine family) started making brandy as a side hustle in his winery in the Penedès region of northern Spainnear. Some 84 years later, Miguel Torres Maczassek took this family spirit experience to Chile, crafting the first pisco of the Torres empire from grapes grown in the picturesque Limari Valley.
El Gobernador captures all the flavour of the Chilean sunshine too, especially thanks to the Muscat grapes used to give brightness and life. A single distillation is used to capture some of the grapey character rather than creating just another neutral spirit.
The Muscat of Alexandria grape distilled to make this Pisco is the same as Sicily's famously aromatic Zibbibo, and you can really feel it on the nose. This is floral and aromatic, with notes of elderflower and musk. The palate is waxy, and just as fruit-driven as the nose. Get those sours on the go!

PAIRING GUIDE
Pisco is fast taking the spirits world by storm, and we’re absolutely swooning over this beautiful and flavourful release by El Gobernador. It’s going to be the ideal pairing for all your favourite ceviche dishes, and will also pair impressively with sushi and sashimi, too. Lomo and other cuts of cured pork are another classic pairing to try, and we also enjoyed it very much alongside salads featuring exotic fruits, dried fruits and spices, as well as with flavours like baharat and za’atar.
