Story

Found in the heart of Bootle, Liverpool, Colbier Brew Co. has been crafting “proper sound beers” since 2024.

Founded by local legends Mike Corbett, Stuart Rumble, and Vik Williams, three mates with over a decade of combined experience behind the bar and in the brewhouse, Colbier is the love child of passion, pints, and playlists. With backgrounds spanning some of Liverpool’s best-loved craft beer haunts, they set out to brew beers that are big on flavour, low on nonsense, and always in tune.

At Colbier, every brew comes with a musical twist. Their ever-evolving range covers everything from crisp Kölsches and hoppy pale ales to bold dark beers and seasonal specials, all with names that nod to their shared obsession with music. Think of it as a mixtape in beer form.

The taproom? A proper local gem. It’s where the beer flows fresh, the records spin loud, and the community vibes are stronger than a double IPA. Colbier is more than just a brewery, it’s a chorus of quality, creativity, and Scouse soul that’s already making noise on the UK craft beer scene.

Our second pick from Colbier is a fresh summer release and a pitch-perfect take on the Belgian Wit. Brewed with orange peel and coriander, it’s bright, crisp, and delicately spiced, with subtle citrus notes that make it effortlessly drinkable and a clear favourite at the taproom.

PAIRING GUIDE

There’s something about a Belgian-style wheat beer in the summertime that never fails to hit the spot, and we were mightily impressed by this aromatic and oh-so refreshing release from Colbier. Those herbaceous and citrus notes make it a brilliant pairing with simple white meat and lemon combos, and we loved it with a fresh vegetarian pasta dish with green beans or peas. Chicken Kiev, white lasagna, orzo salads and pad Thai would also work brilliantly with this one.
