Story
Nestled in Bootle, just north of Liverpool’s centre, Colbier Brew Co stands out as one of the freshest voices in the UK’s craft-beer scene. Founded in 2024 by friends Mike Corbett and Vik Williams, later joined by a third partner, the brewery reflects their twin passions: great beer and great music.
Colbier doesn’t stick to just one style, their beer range is a joyful mash-up of traditional British ales and continental-inspired brews, all shaken up with bold, modern touches. Their core range includes session-friendly pale ales like “Overture” (a hazy pale ale), “Chorus” (a classic pale), and “Accent” (a traditional gose), while the back catalogue swings from saisons and blondes to stouts and experimental one-offs.
Though Colbier doesn’t yet have a permanent taproom at the Bootle site (security restrictions make that tricky), their beers are making the rounds far and wide, pouring in pubs across Liverpool, Manchester, Sheffield and beyond.
What began only a year or so ago has already turned heads: from humble roots to winning the SIBA Best New Independent Brewery award in 2025. For a brewery so young, Colbier’s story blends ambition, creativity and real-world craft. Get ready, these 'Proper Sound Beers' are only getting started.
At Good Pair Days, we just can’t get enough of Colbier! This month, we’re showcasing their winter special ‘Arpeggio’, a mesmerising Red Rye IPA. Poured in a rich amber-red, it’s a masterclass in malt complexity. The rye malt takes centre stage, offering a subtle peppery spice, layered with notes of caramel and toasted grain for a warming, full-bodied finish. Pop on the fire and get your feet up...you will not be disappointed!

Colbier Brew Co is a brewery after our own hearts. Proudly British and part of the fast-growing Liverpool craft beer scene and yet with a deep love for European brewing traditions, it’s home to some of the best IPAs we’ve come across all year. This red rye IPA is a stunning example of their commitment to quality; complex, deeply flavourful and utterly refreshing, it’s a wonderful beer to look forward to at the end of a long day. As for food pairing, we loved how this beer matched with dishes featuring smoky paprika and plenty of garlic – think chorizo tapas dishes, white fish with paprika butter, or a heaving bowl of goulash with crusty bread. Fried rice dishes, barbecue ribs and homemade burgers will work well, and it’s also great with a tikka masala or vindaloo, too.
