You might not know the variety Frappato, but that's ok - this is the perfect intro! It's a hearty wine, yet one that shows freshness and zest as well. Red fruits, gravel, plenty of floral notes. Think Pinot Noir, but with a Sicilian attitude. Loads of redcurrant and cherry, charcoal and tang. Balanced between rich and fresh. Excellent drinking.

Established back in 1980, COS is a leading producer in the south of Italy. The winery is named after an acronym of the surnames of the founders - Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. These days Occhipinti is the main man, and his family name is famous on the island and across the world of wine, thanks in most part to his high energy daughter Arianna, whose own winery is now a Sicilian legend. All the vines are farmed biodynamically, and have been since the winery started producing wine. These vines in the deep south of Sicily thrive in the hot, dry climate. Using a combination of clay amphora, concrete, and old, large oak barrels, Giusto mainlines the unique character of his site into a fascinating collection of fresh, complex reds and extraordinary skin contact amber wines. These are natural wines of rare complexity and energy, and rightfully some of the most respected in the region today!

You don’t come across a lot of Frappato wines, but this is something we’d definitely like to change… because this bottle from COS is simply delicious! It’s a top pairing for the rich flavours of sun-dried tomatoes and roasted red capsicum, and with pasta dishes featuring smoky bacon and tomato passata. Pizza with anchovies and punchy cheeses, Italian rustic pork stews, and Tuscan bean soup would also be top pairings, and it’s also great with roasted salmon or seared tuna, especially when lightly chilled.

Sicily is a productive island located in the Mediterranean Sea, off the southern coast of Italy. The island has a varied landscape, with low coastal plains to hills and even active volcanic mountains. The climate is Mediterranean, with hot, dry summers and mild winters. Disease pressure is low thanks to drying coastal breezes making the region ideal for organic farming practices. The soils are volcanic, sandy, and clay. Sicily can be divided into three wine regions, including the volcanic Etna DOC on the eastern side of the island, known for its red wines made from the Nerello Mascalese grape. The Marsala DOC on the island's western side is known for its fortified wines. The remaining Southeast of the Island produces a range of wines, notably Frappato and Nero d’Avola.
